8 Inch (203mm) 1095 High Carbon Steel Chefs Knife

This handmade 8 inch chef's knife is crafted with 1095 steel. It's high carbon steel that's tough and is easy to resharpen with a basic sharpening kit.

It's been heat treated to achieve a hardness of appropriately 63 rockwell. This is harder than typical (factory produced) chefs knives and means that the knife will take a fine, sharp edge. However it should not be used on stone or glass chopping boards and is not intended to tackle bone with. It's also ground with a gentle convex grind and a distal taper which improves the ease of cutting.

The handle is made from quilted maple that's been stabilised with resin. Next to that is a piece of black G10 glass fibre material. The ferrule is made from white juma which is a highly durable resin material. The handle is held together with super strong aerospace epoxy.

The blade is approximately 203mm (~8 Inches) long and 49mm (~1.9 inches) tall at the heel. The blade tapers to less than 1mm at the tip. The handle length is approximately 130mm (~5.1 inches). The knife has good knuckle clearance, even for big hands. It's balance point is ideal for a pinch grip, laying between the start of the logo and the start of the handle.
