This handmade 8 1/2 inch chef's knife is crafted with 80crv2 steel. It's high carbon steel that's tough and is easy to resharpen with a basic sharpening kit.

It's been heat treated to achieve a hardness of appropriately 60 rockwell. This is harder than typical (factory produced) chefs knives and means that the knife will take a fine, sharp edge. However it should not be used on stone or glass chopping boards and is not intended to tackle bone with. It's also ground with a gentle convex grind and a distal taper which improves the ease of cutting.

The handle is made from ash that's been stabilised with resin. The ferrule is made from green micarta which is a highly durable resin & canvas material. The handle is held together with super strong epoxy and a domed stainless steel pin.

The blade is approximately 212mm (~8 1/2 Inches) long and 56mm tall at the heel. It tapers from 5mm thick at the spine to less than 1mm at the tip. The handle length is approximately 142mm (~5 1/2 inches). The knife has good knuckle clearance, even for big hands. It's balance point is ideal for a pinch grip, laying between the start of the logo and the start of the plunge line.
