8 Inch Chefs Knife With Modified S Grind
This handmade stainless steel chef's knife is crafted from 14c28n Swedish stainless steel which takes a really sharp, fine edge and is easy to sharpen. It's been heat treated, including being cooled to below -76 deg celsius, to achieve a hardness of approximately 61 rockwell. This is much harder than typical (factory produced) knives. This means that the knife will hold a sharp edge for longer.
It has a modified s grind which improves the ease of cutting and helps with food release through the use of both a convex grind and a hollow grind that runs down the length of the blade.
The handle is made from stabilised maple burl wood, black g10 composite material and a thin spacer of nickel silver for contrast; which is all then bonded to a thin liner of white g10 composite material. The handle is held together with super strong resin, copper pins in the wood and a black carbon fibre pin in the black g10. The handle has been given a multi-coat lacquer finish.
The blade is approximately 20 cm (~8 Inches) long and the handle length is approximately 11.5 cm (~4 1/2 inches). It's 5.2 cm (~2 inches) deep at the heel to give good knuckle clearance, even for big hands. It's really nicely balanced and is super comfy in both small and large hands.
