7 1/4 Inch (181mm) Stainless Steel Chefs Knife With Ash & Petals Handle
This handmade 7 1/4 inch chef's knife is crafted from Swedish 14c28n stainless steel which takes a really sharp edge. It's also quite easy steel to sharpen and holds its edge well.
It's been heat treated, including being cooled with liquid nitrogen to below -196 deg celsius, to achieve a hardness of approximately 62 rockwell. This is harder than typical (factory produced) western knives. This means that the knife will hold a sharp edge for longer. It's also ground thin which improves the ease of cutting.
The handle is made from ash burl that's been stabilised with resin. The liner and is made from white g10 and the bolster from dried and stabilised petals cast in clear resin. The handle is held together with super strong epoxy and stainless steel pins.
The blade is approximately 18 cm (~7 1/4 Inches) long and the handle length is approximately 12.7 cm (~5 inches). The knife has good knuckle clearance, even for big hands. It's really nicely balanced and is super comfy in both small and large hands.
