9 Inch Chefs Knife With Modified S Grind
This handmade stainless steel chef's knife is crafted from 14c28n Swedish stainless steel which takes a really sharp, fine edge and is easy to sharpen. It's been heat treated, including being cooled to below -76 deg celsius, to achieve a hardness of approximately 61 rockwell. This is much harder than typical (factory produced) knives. This means that the knife will hold a sharp edge for longer.
It has a modified s grind which improves the ease of cutting and helps with food release through the use of both a convex grind and a hollow grind that runs down the length of the blade.
The handle is made from black g10 composite material and a copper bolster which is all then bonded to a thin liner of copper. The handle is held together with super strong resin and copper pins.
The blade is approximately 22.5 cm (~9 Inches) long and the handle length is approximately 11.5 cm (~4 1/2 inches). It's approximately 5.2 cm (~2 inches) deep at the heel to give good knuckle clearance, even for big hands. It's really nicely balanced and is super comfy in both small and large hands.
